Beef Vegetable Skillet Dinner

This recipe is a quick meal that combines protein and vegetables all in one dish. You can serve it by itself in a bowl; spoon the mixture into lettuce leaves or paleo-approved tortillas; or serve over warmed cauliflower rice.

 Beef Vegetable Skillet Dinner

Prep Time: 15 minutes

Cook Time: 20 minutes


  • 1 Tablespoon olive oil
  • ½ medium red onion, diced
  • 2 cloves garlic, diced
  • 1 red bell pepper, chopped
  • 2 celery stalks, chopped
  • 2 medium carrots, chopped
  • 1 Tablespoon chili powder
  • 1 teaspoon ground cumin
  • Pinch of crushed red pepper flakes
  • 1/2 teaspoon salt
  • 1pound lean ground beef or turkey
  • Zest of ½ fresh lime
  • 3/4 cup fresh salsa
  • ¼ cup chopped cilantro


  1. In a large skillet, heat oil over medium-high heat. Add onion and sauté for 2 minutes. Add garlic and sauté 1 minute, then add red bell pepper, carrots, spices, and celery and sauté an additional 3-5 minutes.
  2. Add ground beef and cook until no longer pink. Add lime zest and heat through.
  3.  Served as desired, topped with 3 Tbsp salsa and cilantro.
